Pumpkin Pie

This recipe came from James and Mitaki. I've enjoyed it at Thanksgiving and it's well worth the effort in making it from scratch. The recipe below is just for the good stuff inside. You're on your own for the pie crusts. 3 1/2 to 4 cups pumpkin 4 eggs 1 1/2 cup sugar 2 tsp cinnamon 1 tsp. powdered sugar 1/2 tsp cloves 1/2 tsp nutmeg 2 cans evaporated milk

Cut and gut pumpkin into halves. Bake pumpkin halves @ 350 degrees for 45 minutes to an hour.

Combine all ingredients. Spoon into 3 pie crusts.

Bake @ 350 degrees for approximately 45 minutes. Makes 3 pies.

Corn Casserole

This is the Grandma Grimm recipe. The only way I've seen this made was in a deep casserole dish so most of the corn sinks to the bottom. It may do better in a shallow dish, but your mileage may vary. 1 can cream corn 1 can regular corn 2 eggs 1/4 cup milk 1/2 cup saltine crackers 1/4 cup melted butter 1/4 cup grated carrot 1/4 cup green peppers 1 tbsp chopped celery 1 tbsp chopped onion 1/8 tsp hot sauce 1/2 tsp sugar 1/2 tsp salt 1/2 cup shredded cheddar

Combine eggs and milk. Blend by beating. Add crack crumbs until liquid is gone. Add all other ingredients except for shredded chedar. Place in dish and cover with cheese.

Bake @ 350 degrees for 45 minutes.

Sweet Potatoes with Pineapple and Marshmallows

It's sorta the sweet potato equivalent of a jello mold, but it's tasty. This recipe came from Willa Woodard (Granny Brown's sister-in-law) but I have many memories of Mom making it. Eventually, we switched to the sweet potatoes with brown sugar recipe for most family gatherings, but this is still a classic. 2 cups sweet potatoes, boiled until soft, then peeled and mashed 1 cup milk 1 small can crushed pineapple 1 tsp cinnamon Squeeze butter to taste (or shavings of a refridgerated stick) miniature marshmallows (enough to cover the top)

Mix all ingredients and spread into a greased pan (9x13?). Squeeze butter over the top or spread butter shavings.

Bake @ 350 degrees for 20-30 minutes. Add marshmallows to top and continue baking until top is browned.
